Directions:
Combine cooked rice, dark beans, Rotel tomatoes, cilantro, cumin, garlic as well as common salt together inwards a large bowl. In a skillet gear upward the diced onion until translucent. Add to the rice mixture. Cook diced zucchini for a few minutes inwards same skillet. Add to rice mixture. Add corn to mixture.
Combine Greek yogurt as well as salsa verde together. Add to mixture as well as stir.
Once everything is combined as well as stirred together, pour into a 9x13 dish. Top amongst shredded cheese.
Bake at 350 degrees for 25-30 minutes, until cheese is melted as well as warmed throughout!
